SPICED PEACH JAM
5 cups prepared peaches
(about 4 lbs. )
2 tablespoons lemon juice
1 tablespoon grated lemon
peel
I large cinnamon stick
7 cups sugar
1 pkg. Jel Ease-Pen-Jel Fruit
Pectin
Wash and sterilize 8-oz. jelly
jars; scald lids and rings.
Wash and pit fully ripe
peaches; peel, cut into pieces
and grind. Measure fruit into 6
to 8-quart saucepan; if
necessary add water to make
5 cups. Add lemon juice, peel
and cinnamon stick. Measure
sugar into large bowl; set
aside.
Combine pectin with fruit
mixture. Cook over high heat
until mixture comes to a hard
boil, stirring constantly. Add
sugar all at once. Cook and
stir over high heat until
mixture comes to a full rolling
boil (one that cannot be
stirred down). Boil hard l
minute.
Remove from heat; skim
and stir with metal spoon or
skimmer for 5 minutes to
remove foam. Remove cin-
namon stick. Ladle into hot
jars, leaving ],-inch rim at
top+. Immediately wipe jar
rim clean, place hot lid on jar
and screw metal ring on fir-
mly. Check for seal in 12
hours. 7 to 8 cups.
+To seal with paraffin:
Ladle jam into hot jars,
leaving inch at top. Cover
with thin layer of melted
paraffin, about 1, inch thick.

M ONTPELI:ER--Summer
vacation inquiries to Vermont
are running 32 percent ahead
of totals recorded for a similar
period last year, and sub-
stantially beyond those
reported by other northern
New England states.
Director Donald A. Lyons
said the state travel division is
processing an ever-increasing
number of requests for travel
information. Current figures
show more than 20,000
vacation inquiries received by
the division.
"These totals are running
more like those of 1978 which
was an excellent over-all
vacation year," said Lyons.
State and private ad-
vertising is just beginning to
appear in regional and
national publications. Lyons
said these ads will spurt the
inquiries during the next two
months.
