Fruit glazed cheese cake
One 9-inch square cake
CRUST: cups)
I cup zwieback crumbs IIz cups fresh whole
I/4 cup (% stick) butter, strawberries
melted 3/4 cup sugar
2 tablespoons sugar i/, cup water
FILLING: 2 tablespoons fresh lemon
I cup cottage cheese juice
1 package (8 oz.) cream 2tablespoonscorustarch
cheese, softened I/4 cup water
3/4 cup sugar one-third cup fresh
I teaspoon vanilla extract blueberries
I/Hteasp onnsalt 2 small nectarines, thinly
3 eggs, separated sliced
3tablespoons flour 2 kiwi fruit, peeled and
GLAZE: thinly sliced
(Yield: 1 & one-thirds
For crust, combine all ingredients. Press onto bot-
tom and sides of a 9-inch square baking pan.
Refrigerate while preparing filling. For filling, beat
cottage cheese in small mixing bowl on high speed of
mixer until almost smooth, about 5 minutes; set aside.
Beat cream cheese in large mixing bowl until light and
fluffy. Beat in cottage cheese until smooth. Beat in
sugar, vanilla and salt. Beat in egg yolks one at a time.
Gradually blend in flour. Preheat oven to 350 degrees
F. Beat egg whites until soft peaks form; fold into
cheese mixture. Spoon into crust. Bake 50 to 60 minutes
or until light brown on top; turn off heat; open oven
door and let cake cool in oven. (It is normal for cake to
sink slightly in center.) Refrigerate several hours or
overnight. For glaze, mash I/2 cup of the strawberries
and place in saucepan with sugar, ½ cup water and
lemon juice. Combine cornstarch and I/4 cup water;
add to fruit mixture. Heat to boiling, stirring con-
stantly. Boil and stir 2 minutes. Strain and cool. Slice
remaining strawberries. Top cheesecake with rows of
strawberries, bkleerries, nectarines and kiwi. Pour
enough sauce over to glaze. Pass remaining sauce.

Fruit glazed cheese cake
One 9-inch square cake
CRUST: cups)
I cup zwieback crumbs IIz cups fresh whole
I/4 cup (% stick) butter, strawberries
melted 3/4 cup sugar
2 tablespoons sugar i/, cup water
FILLING: 2 tablespoons fresh lemon
I cup cottage cheese juice
1 package (8 oz.) cream 2tablespoonscorustarch
cheese, softened I/4 cup water
3/4 cup sugar one-third cup fresh
I teaspoon vanilla extract blueberries
I/Hteasp onnsalt 2 small nectarines, thinly
3 eggs, separated sliced
3tablespoons flour 2 kiwi fruit, peeled and
GLAZE: thinly sliced
(Yield: 1 & one-thirds
For crust, combine all ingredients. Press onto bot-
tom and sides of a 9-inch square baking pan.
Refrigerate while preparing filling. For filling, beat
cottage cheese in small mixing bowl on high speed of
mixer until almost smooth, about 5 minutes; set aside.
Beat cream cheese in large mixing bowl until light and
fluffy. Beat in cottage cheese until smooth. Beat in
sugar, vanilla and salt. Beat in egg yolks one at a time.
Gradually blend in flour. Preheat oven to 350 degrees
F. Beat egg whites until soft peaks form; fold into
cheese mixture. Spoon into crust. Bake 50 to 60 minutes
or until light brown on top; turn off heat; open oven
door and let cake cool in oven. (It is normal for cake to
sink slightly in center.) Refrigerate several hours or
overnight. For glaze, mash I/2 cup of the strawberries
and place in saucepan with sugar, ½ cup water and
lemon juice. Combine cornstarch and I/4 cup water;
add to fruit mixture. Heat to boiling, stirring con-
stantly. Boil and stir 2 minutes. Strain and cool. Slice
remaining strawberries. Top cheesecake with rows of
strawberries, bkleerries, nectarines and kiwi. Pour
enough sauce over to glaze. Pass remaining sauce.
